A delicious lunch, or side, and packed full of healthy fats, and protein. The perfect balanced meal!
Canned black beans (195 grams)
1/2 Red pepper
1/2 Red onion
Handful of fresh parsley
Salt & pepper to taste
Cumin to taste
Tobasco sauce (if you like a kick!)
1. Drain and rinse the canned black beans.
2. Cut the avocados, lengthwise, around the pit. To split the avocado in half, put a hand on either side and gently twist in opposite directions. Remove the pit.
3. Wash the veggies & remove the stem and the seeds from the red pepper. Dice the remaining red pepper. Chop the lime in half. Peel and dice the red onion. Dice half the cucumber and chop the remaining into strips for enjoying on the side.
4. Remove the flesh from the avocado and mix it with the red pepper, fresh parsley, lime, red onion, diced cucumber, and salt and pepper to taste. Fold in the beans. Spoon the mixture back into the avocado halves. Add extra fresh parsley, salt, pepper & hot sauce or cumin to taste.
